


Grilled Lobster Tails with Strawberry-Mango Salsa

Grilled Lobster Tails with Strawberry-Mango Salsa

Ingredients
4 lobster tails
2 lemons, halved and thinly sliced
1 1/2 sticks (3/4 cup) unsalted butter, divided
2 Tbs lemon juice
1 tsp fresh parsley leaves, chopped
1/4 tsp salt
strawberry-mango salsa, for serving (recipe on page 5)
Directions
- Using kitchen shears, cut a straight line down the middle of each lobster tail. Make a left cut and a right cut at the base above the tail fin. Pull the shell open until it cracks. Reach inside the shell, and pull the meat up. Place the lemon slices under the meat. Lower the meat back into the shell. Slice 1/2 stick of butter into 8 pieces. Place two pieces of butter on top of each lobster tail inside the shell.
- Heat a grill to high. Place lobster tails on the grill. Lower the lid. Cook for 8 to 10 minutes or until lobster shells turn reddish-orange and lobsters are cooked through.
- Melt the remaining butter with the lemon juice, parsley and salt. Serve the lobster tails with strawberry-mango salsa, melted butter and grilled lemon halves (if desired).
